Mushroom Manicotti
with spinach
Ingredients
Manicotti shells
Dash olive oil
1 clove garlic, minced
½ tsp basil
¼ tsp red pepper
1 1/2 cup mushrooms, chopped
12 oz ricotta
4 green onions, chopped
2 cups marinara sauce
1 cup mozzarella cheese
1 bunch baby spinach
Directions
1. Preheat oven to 350 degrees.
2. Cook 8 manicotti noodles according to package directions. Rinse with cold water and blot dry.
3. Sauté mushrooms garlic, basil, pepper in olive oil in a skillet until fragrant.
4. In a large bowl combine mushrooms, ricotta and onions. Stuff shells.
5. Spoon half of marinara sauce on the bottom of a 9x13 casserole dish. Place shells in prepared dish. Top with remaining sauce. Bake 30 minutes.
6. Sprinkle with cheese and finish under broiler until hot and bubbly.
7. Serve on a bed of fresh, raw baby spinach.
