Sweet Chili Chicken Pitas

For pitas:
1 Tbsp lard
½ cup warm water
1 Tbsp parsley
½ tsp Dickie Bird Farm Garlic Salt
¼ tsp Dickie Bird Farm Crushed Red Pepper
2 cups self-rising flour plus additional flour for rolling

1. In a large bowl, soften lard in warm water.
2. Add salt and herbs.
3. Knead in flour.
4. Cover bowl and allow dough to rest for 30 minutes.
5. Preheat a nonstick skillet to medium.
6. Break off a small piece of dough. Roll out on a floured surface.
7. Fry each side for 1-2 minutes. Remove from heat and cover to keep warm.

For Filling:
4 Tbsp Chili sauce
3 Tbsp honey
4 boneless chicken thighs or breasts
¼ tsp Dickie Bird Farm Minced Garlic
Coarse Ground Black Pepper
½ cup Monterrey Jack cheese, shredded
1 large handful fresh spinach
2 green onions, chopped

1. In a small bowl, combine chili sauce and honey.
2. Grease a large skillet.
3. Brown chicken with garlic and pepper until cooked though.
4. Chop chicken and return to skillet. Sauté with sweet chili sauce to coat.
5. Sprinkle warm cheese on pitas to melt. Add some spinach and chopped onion. Top with chicken.
6. Serve immediately.
