Tuna Meatballs
Tuna MeatballsIngredients
2 large cans (24 oz total) tuna in oil
½ cup crushed saltine crackers
1/3 cup cheddar cheese, shredded
½ tsp Dickie Bird Garlic Salt
¼ tsp red pepper
1 large egg
½ cup flour
Oil for frying
Directions
1. Heat 1/4 inch oil to medium in a heavy cast iron pan.
2. Preheat oven to 350 degrees.
3. Drain tuna very well.
4. In a large bowl combine tuna, cracker crumbs, cheese, seasonings and egg. Mix well.
5. Place flour in a shallow dish.
6. Form tuna balls. Roll in flour.
7. Fry to brown all sides.
8. Move cast iron pan directly to oven. Bake 20 minutes, turning halfway through cook time.
