Fresh Goat Cheese and Vegetable Frittata
Ingredients
1 Tbsp butter
1 clove garlic, minced
Handful asparagus, chopped
3 Tbsp bell peppers, chopped
3 green onions, chopped
6 eggs
3 Tbsp Chevre
Salt and pepper
Directions
1. Preheat oven to 375 degrees. Grease a round pie dish.
2. Melt butter in stovetop skillet. Sauté garlic until fragrant, 1 minute. Add chopped veges to skillet, cook briefly.
3. In a large bowl, whisk together eggs and Chevre. Season with salt and pepper. Pour eggs into skillet. Scatter veges over top.
4. Bake 20-25 minutes. Serve hot.
