Sandwich Sourdough Bread

Ingredients
2 teaspoons rapid rise yeast
2 Tablespoons sugar
1 1/2 cups warm water
1 1/2 cup sourdough starter, room temp
1 Tablespoon vegetable oil
2 teaspoons salt
4-5 cups bread flour

Directions
1. In a large bowl combine yeast and sugar. Add warm water. Allow yeast to swell for 5 minutes.
2. Stir in starter and oil.
3. Add salt with flour. Start with 4 cups of flour and add more as required. Dough should be moist. Work dough until smooth and elastic.
4. Grease a bowl. Place dough in bowl and cover loosely with a towel. Allow dough to rise in a warm place until it has doubled in size, 1-2 hours.

5. Punch down and divide the dough into two portions. Roll dough out to two large ovals. Roll up to form loaves; Pinch seams, tuck ends.
6. Grease loaf pans. Place loaves in pans, cover with greased plastic wrap and allow dough to rise just above pan rim in a warm place, 1-2 hours.
7. Preheat oven to 350 degrees. Bake 30 minutes. Cool before cutting.
