Makes about 1 quart
Ingredients
3 quarts goat milk
3 cups sugar
1 Tbsp vanilla
1 tsp sea salt
1 ½ tsp baking soda
3 Tbsp cream
2 cinnamon sticks
Directions
1. In a heavy stockpot with lots of room, combine goat milk, sugar, vanilla and salt. Bring to boil, stirring constantly, until sugar has dissolved completely (approx. 5 minutes). Reduce to simmer.
2. In a small bowl, whisk together cream and baking soda. Pour into stockpot while stirring. The milk will froth up. Stir until foam subsides.
3. Return stockpot to low heat. Toss in cinnamon sticks. Cook cajeta until consistency is that of syrup (3+ hours) stirring often.
4. Cool. Remove cinnamon sticks. Keep refrigerated in airtight containers.
