Dark Chocolate Zucchini Cake
Ingredients
1 cup butter
2 cups sugar
2 tsp vanilla
4 eggs
½ tsp baking powder
½ tsp salt
1 cup dark chocolate cocoa powder
1 heaping cup self-rising flour
1 cup zucchini, shredded
12 oz dark chocolate chips
Directions
1. Preheat oven to 350 degrees F.
2. Melt butter.
3. In a large bowl, mix butter, sugar, vanilla, eggs, baking powder, salt and cocoa.
4. Add flour, stir to create batter.
5. Mix in shredded zucchini with a large spoon.
6. Pour into a greased 9x13 rectangular baking dish.
7. Bake 35-40 minutes, until center well set.
8. Sprinkle with chocolate chips immediately. Wait 5 minutes for chips to melt and then use a spatula to spread chocolate like frosting.
9. Cool completely in fridge before cutting.
