Creamy Garden Tomato Soup
Ingredients
2 Tbsp butter
3 cloves garlic, minced
2-3 lbs mixed garden tomatoes
32 oz Spicy Hot low sodium V8
½ cup heavy cream
Salt and pepper to taste
Directions
1. Melt butter in crockpot on high with minced garlic.
2. Wash tomatoes, remove cores and place meat in a food processor or blender. Puree.
3. Pour pureed tomatoes into crockpot with V8. Turn heat to low. Cook 3-4 hours.
4. Salt and pepper to taste. Swirl a Tbsp of cream in each bowl just before serving.
