Sweet n’ Sour Peppers

Ingredients
3 lbs small peppers, I used Chinese 5 color
4 cups sugar
2 tsp salt
3 cups white vinegar
3 cups apple cider vinegar
1 Tbsp celery seed
1 Tbsp multicolored peppercorns
1 tsp mustard seeds
4-5 pint sized jars, sterilized

Directions
1. Wash peppers well.
2. In a heavy stockpot combine sugar, salt, vinegars, celery, peppercorns and mustard seeds. Bring to boil, stirring constantly. Reduce to simmer for 15 minutes.
3. Pack peppers tightly in jars. Ladle sweet n’ sour syrup over peppers. Secure lids.
4. Process jars in accordance with safe canning guidelines.
