Sweet n’ Spicy Pickle Relish
Ingredients
About 12 (10 cups shredded) pickle cucumbers
4 large red hot cherry peppers
2 green bell peppers
8-10 cloves garlic
2 cups apple cider vinegar
2 cups sugar
2 Tbsp kosher salt
2 Tbsp mustard seed
1 tsp celery seed
4-5 pint sized jars with lids, sterilized
Directions
1. Cut cucumber in half. Remove seeds.
2. Cut peppers and remove seeds and stems.
3. Remove out skins from garlic.
4. Shred cucs, peppers and garlic in a food processor.
5. Place shredded veges in a heavy stockpot with vinegar. Bring to boil and reduce to simmer. Cook 30 minutes until liquid reduced by 1/3.
6. Add sugar, salt, mustard and celery seed to stockpot. Simmer, stirring constantly, until sugar has dissolved. Remove from heat.
7. Fill jars and process jars in accordance with safe canning guidelines.
