Tomatillo Lime Jam
Ingredients
5 cups tomatillos, husks removed finely chopped in a food processor
6 limes
8 cups sugar
½ tsp lard
2/3 cup fruit pectin (2 pkgs)
Jam jars
Directions
1. Sterile jars and lids.
2. Place chopped tomatillos in a heavy stockpot. Squeeze juice from lines in pot. Add zest of one grated lime peels.
3. Add sugar to stockpot. Bring to rolling boil over high heat. Add lard.
4. Stir in pectin, continue to boil, stirring constantly for one minute.
5. Remove from heat. Skim foam.
6. Fill jars and process jars in accordance with safe canning guidelines.
