Okra Fritters
Ingredients
6 Okra pods
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 tsp smoky paprika
1/8 tsp black pepper
1/8 tsp onion powder
1/8 tsp garlic powder
1 large egg
1/2 cup buttermilk
2/3 cup self-rising flour
1/2 cup cornmeal
Vegetable oil for frying
Directions
1. Preheat oven to warm.
2. Heat ¼ inch vegetable oil in a cast iron skillet to 350 degrees.
3. Slice okra very thin. Set aside.
4. In a large bowl, combine remaining ingredients to create batter. Stir in okra to coat.
5. Use a large spoon to drop batter into frying pan. Brown and flip. Continue to fry in small batches. Keep fritters in the warm oven until all fritters are hot n’ ready.
