Patty Pan and Ham Au Gratin
Ingredients
3 large patty pan squash
Salt and pepper
1 clove garlic, minced
¼ cup yellow onion, chopped
¼ cup green bell pepper, chopped
½ cup ham, diced
2 Tbsp butter
1 cup sharp cheddar cheese, shredded
Directions
1. Preheat oven to 350 degrees.
2. Place patty pans on a baking sheet. Bake 20 minutes to soften. Remove from oven. Cool. Peel and scoop out seeds. Chop squash meat into chunks.
3. Grease a skillet. Cook garlic until fragrant. Add onion, pepper and ham to skillet, sauté over high heat 1 minute.
4. Heat oven to 400 degrees. Melt butter in a baking pan in the oven. Toss squash in butter. Season with salt and pepper. Sprinkle veges and ham over squash, top with cheese. Bake 20 minutes. Cool slightly before serving.
