Oven Roasted Taters n’ Onions


Ingredients
6 large potatoes, scrubbed well and cut into chunks
1 yellow onion, chopped
2 cloves garlic, minced
¼ cup vegetable oil
½ cup water
1 lemon
Salt and pepper

Directions
1. Preheat oven to 400 degrees.
2. In a baking pan, combine cut potatoes, onion, garlic, oil and water. Squeeze lemon over top and season with salt and pepper.
3. Roast 20 minutes. Stir. Finish under broiler until skin is crisp and bubbling, about 5 minutes.
