Homemade Pasta Sauce
from summer-time tomatoes

8 cups home-canned tomatoes, drained
2 (6 oz) cans tomato paste
2 Tbsp sugar
1 Tbsp olive oil
6 cloves garlic, minced
1 Tbsp Italian seasoning
1 tsp dehydrated onion
½ tsp paprika
½ tsp black pepper
½ tsp crushed red pepper
Salt to taste

1. Drain tomatoes. Measure about 8 cups into a food processor. Process until sauce consistency.
2. In a heavy stockpot, drizzle olive oil over garlic. Bring to medium heat, sauté until fragrant. Turn heat to low.
3. Pour tomatoes into stockpot. Add tomato paste and sugar.
4. Season with Italian seasoning, paprika, black pepper, crushed red pepper, onion powder. Add salt to taste.
5. Simmer until sauce is very thick. Cool slightly. Store in jars in fridge.
