Savory Onion Jam

Ingredients
½ cup vegetable oil 
½ cup brown sugar
½ cup sugar
8 cups sweet yellow onion, coarsely chopped 
½ tsp kosher or sea salt
½ tsp coarse ground black pepper
1 cup red wine vinegar 

Directions
1. Chop onions very fine in a food processor.
2. Heat vegetable oil and sugars in a cast iron skillet over low heat.
3. Stir constantly until mixture is caramel-colored, 8-10 minutes.
4. Increase heat to medium. Stir onions, salt, and pepper into skillet. Stir frequently as onions start to caramelize and sugar has dissolved, 15 minutes.
5. Pour red wine vinegar into skillet. Simmer until mixture has a jam consistency, 30 minutes.
6. Cool. Spoon into sterilized jars with airtight lids. Process according to safe canning standards or store in fridge.
