Healthier Oatmeal Cookies
Ingredients for pie spice blend:
1 tsp cinnamon
1 tsp ginger
½ tsp nutmeg
Dash allspice
First blend together all seasonings, set aside.
Oatmeal cookie ingredients:
½ cup butter, softened
1/3 cup applesauce
½ cup brown sugar
½ cup white sugar
2 eggs
1 tsp vanilla extract
½ tsp salt
½ tsp baking soda
1 tsp pie spice blend plus additional to top
2 cups self-rising flour
3 cups old fashioned oats
Directions
1. Preheat oven to 350 degrees F.
2. In a large bowl, cream together butter, applesauce and sugars.
3. Add eggs, vanilla, salt, soda and one tsp spice blend to bowl. Mix well.
4. Incorporate flour to form dough.
5. Stir in oats.
6. Drop by spoonful onto ungreased baking sheets. Sprinkle with additional pie spice.
7. Bake 10-12 minutes, until cookies are well-set and golden on top. Remove from oven. Cool.
