Mini Double Chocolate Cheesecakes with Raspberry Topper
Ingredients for crust:
2 cups chocolate graham cracker crumbles
2 Tbsp sugar
½ plus 2 Tbsp butter, melted
24 muffin cup liners in muffin trays
Directions
1. Preheat oven to 350 degrees
2. Mix all ingredients in a large bowl.
3. Spoon crumbles evenly among 24 lined cups.
4. Press down firmly.
5. Bake 6 minutes.
6. Cool.
Ingredients for cheesecakes:
16 oz cream cheese
½ cup corn syrup
¼ cup cream
1/8 cup unsweetened cocoa powder
1 tsp vanilla
2 eggs
7 oz milk chocolate melting wafers, divided
14 oz raspberry pie filling
Directions
1. Preheat oven to 325 degrees.
2. Melt chocolate on stovetop over low heat or in microwave.
3. In a large bowl, beat cream cheese, corn syrup, cream, cocoa and vanilla smooth.
4. Add eggs and half of melted chocolate. Mix well.
5. Spoon mixture into prepared crusts.
6. Bake 20 minutes, until centers have set.
7. Remove from oven. Cool.
8. Drizzle remaining chocolate on top.
9. Cool completely.
10. Top with raspberry pie filling.
