Mini Butter Pecan Pies

Ingredients for crust:
2 cups graham cracker crumbles
2 Tbsp sugar
½ plus 2 Tbsp butter, melted
24 muffin cup liners in muffin trays

1. Preheat oven to 350 degrees F.
2. Mix all ingredients in a large bowl.
3. Spoon crumbles evenly among 24 lined cups.
4. Press down firmly.
5. Bake 6-7 minutes.
6. Cool.

Ingredients for butter pecan pie filling:
¼ cup butter
1 Tbsp sugar
1 ½ cup chopped pecans
1/4 cup heavy cream plus 2 Tbsp
1 container (16oz) Butter Cream Frosting
1 pkg (8oz) cream cheese
1 pkg (11oz) caramel bits

1. Melt butter in a nonstick skillet. Add sugar and pecans. Sauté golden brown. Cool.
2. In a large bowl, whip ¼ cup heavy cream. Add frosting and cream cheese. Whip smooth. Add nuts.
3. Spoon mixture into prepared cups. Refrigerate until set.
4. Melt caramel with 2 Tbsp cream. Drizzle over pies. Refrigerate until serving.
