Cajun Crabby Patties

Ingredients
2 cans crabmeat, drained
2 eggs
2 Tbsp mayo
1 tsp Worcestershire sauce
½ tsp Cajun seasoning
Dash sugar
1 jalapeno pepper, seeded and chopped
1/8 cup sweet yellow onion, chopped
1/8 cup cornmeal
1/2 cup flour
Oil for frying

Directions
1. Heat a cast iron skillet with 1/8 inch oil to 300-350 degrees F.
2. Preheat oven to 350 degrees.
3. Combine all ingredients in a large bowl. Mic well to make a thick batter.
4. Drop batter by spoonful into hot fry oil. Fry golden on both sides.
5. Place browned cakes in oven for 10-13 minutes to finish (This ensures a fully cooked inside and crisp golden outside).
6. Serve hot.
