Crispy Baked Eggplant Parmesan

Ingredients
1 eggplant, cut into ¼” inch thick slices
Salt
1 tsp Dickie Bird Farm Garlic Seasoning
1 cup flour
1 eggs
1 cup Panko breadcrumbs

1/8 cup grated parmesan cheese
Spray oil
Marinara sauce

Directions
1. Preheat the oven to 400 degrees F.
2. Toss eggplant slices with salt. Spread out on paper towels. Allow eggplant to sit 30 minutes. Dab off moisture with additional paper towels.
3. Combine flour and garlic seasoning in a shallow dish.
4. In a second shallow dish, whisk egg.
5. Pour breadcrumbs and parmesan in a third shallow dish.
6. Coat each side of eggplant slices with flour. Dip in egg. Drench in breadcrumbs. Place on a baking sheet. Spray lightly with oil. Bake 30 minutes, flipping at the half-way mark.
7. Remove crispy gold eggplant from the oven. Serve with marinara sauce.
