How to preserve cantaloupe and honeydew

1. Harvest melons at peak ripeness.
2. Cut into bite-sized chunks, discard peels and seeds to compost.
3. Place no more than 3 cups of fruit chunks in each vacuum seal bag or Ziploc. I prefer vacuum sealing to maintain optimal flavor and texture, and guard against freezer burn.
4. Use vacuum sealer to remove air, or press as much air as possible before zip sealing.
5. Freeze flat.
6. Unthaw melon in fridge or in a bowl of cold water for best texture.
