Homemade Herbal Vinegars
Make a quick and easy salad dressing recipe: whisk together herbal vinegar and olive or grapeseed oil. If you feel like being fancy, add a little local honey to the mix.


Berry Mint Vinegar
Ingredients
2 cups red wine vinegar
1 lb berries (I used beach plums, raspberries or blackberries also work well)
Fresh mint, chopped

Directions
1. Pour the vinegar into a saucepan with cover. Bring to boil.
2. Remove from heat.
3. Add berries and mint. Cover. Leave mixture to infuse at room temperature for 24 to 48 hours.
4. Strain liquid and bottle. Discard berries and mint.

Rosemary Vinegar
Ingredients
2 cups white wine vinegar
Fresh rosemary, chopped plus 3 sprigs rosemary for decoration

Directions
1. Pour the vinegar into a saucepan with cover. Bring to boil.
2. Remove from heat.
3. Add chopped rosemary. Cover. Leave mixture to infuse at room temperature for 24 to 48 hours.
4. Strain liquid and bottle. Add 3 remaining sprigs rosemary to bottle for decoration.
