Horehound Ginger Cough Drops

Ingredients
1 1/2 cup fresh horehound leaves
½ cup ginger root, chopped
1 cup water
2 cups sugar, additional sugar for coating optional
3 tablespoons honey

Directions
1. Place horehound leaves and chopped ginger root in a saucepan with water.
2. Bring to a boil and then reduce heat to medium for about 20 minutes.
3. Remove from heat.
4. Strain liquid. Discard leaves and ginger.
5. Return liquid to pan with sugar and honey. Bring to a boil and then reduce heat to medium.
6. Stir occasionally until temperature reaches 330 degrees F and remove from heat.
7. Line a square pan with foil, grease with butter.
8. Pour mixture into pan and cool completely.
9. Shatter into small pieces.
10. Coat with additional sugar if desired. As Mary Poppins said, sugar makes the medicine go down- and herbal remedies taste less bitter.
