Jicama is a root vegetable that is native to Mexico and Central America. The starchy veg has a light brown skin and white, crisp ‘meat’ that is similar to the texture of a turnip. It has a mild, sweet flavor.  Jicama is a good source of fiber, vitamin C, and potassium. Carb-cutters love substituting it in place of potatoes.


Crispy Jicama Fries


Ingredients


1 medium jicama (about 1 pound)

1 lard for frying

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

Ketchup for serving


Directions

  1. Remove jicama peel and cut ‘meat’ into matchsticks

  2. Bring 1 inch of water to a boil

  3. Boil matchsticks for 5 minutes, pat dry

  4. Heat frying oil in a cast iron skillet

  5. Fry matchsticks in small batches until golden

  6. Drain well

  7. Toss with sea salt and pepper and serve piping hot!
